Vegetarian Chili

  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 red chili, chopped
  • Olive Oil Spray
  • 2 tsp ground cumin
  • 1 tsp hot smoked paprika
  • 1/2 tsp chili powder (optional)
  • 7oz quinoa, rinsed and drained
  • 21oz vegetable stock
  • 1 can (14oz) chopped tomatoes
  • 1 can (14oz) black beans, rinsed and drained
  • 1 small avocado, sliced
  • Coriander leaves, to serve

Instructions

  1. Fry the onion, garlic and red chili in a spray of olive oil until soft, then add all the spices. Add extra chili powder if you like it spicy.
  2. Add the quinoa, stock, tomatoes and black beans. Cover and simmer for 30 minutes until the quinoa is tender and the sauce has thickened.
  3. Divide into 4 bowls and top with avocado slices and coriander leaves.
