Vegetarian Chili

- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 red chili, chopped
- Olive Oil Spray
- 2 tsp ground cumin
- 1 tsp hot smoked paprika
- 1/2 tsp chili powder (optional)
- 7oz quinoa, rinsed and drained
- 21oz vegetable stock
- 1 can (14oz) chopped tomatoes
- 1 can (14oz) black beans, rinsed and drained
- 1 small avocado, sliced
- Coriander leaves, to serve
Instructions
- Fry the onion, garlic and red chili in a spray of olive oil until soft, then add all the spices. Add extra chili powder if you like it spicy.
- Add the quinoa, stock, tomatoes and black beans. Cover and simmer for 30 minutes until the quinoa is tender and the sauce has thickened.
- Divide into 4 bowls and top with avocado slices and coriander leaves.
